Baby arugula is arugula harvested young for its more smaller, delicate leaves and flavor. While not as intense in flavor as mature arugula it still keeps that peppery essence and mustard quality that separates arugula from other herbs and leafy greens. Baby Arugula contains more than three times the amount of vitamin C than spinach and is rich in beta carotene. Whole leaves can be combined with chopped salad greens for a salad or added to hot pizza and served when wilted. Baby Arugula that is stored properly in the refrigerator can last up to 21 days.
