Finger bananas, are a thin, creamy banana that is easier to peel than most.The bright yellow fruit is harvested young, when the skins are soft and pliable, before they ripen to a brownish-yellow color. This variety’s skin will develop dark flecks when fully ripe. Lady Finger bananas taste sweeter than the more common Cavendish banana and are generally used in the same ways: ripe peel is peeled and eaten raw, or cooked into desserts.
