Classic Blueberry Pancakes: Recipe

Ingredients:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 cup fresh blueberries
  • Extra butter for greasing the pan

Instructions:

  1. In a large bowl, sift together flour, baking powder, sugar, and salt.
  2. In another bowl, beat together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. Gently fold in the blueberries.
  5. Heat a lightly buttered frying pan over medium heat. Pour or scoop the batter onto the pan, using approximately ¼ cup for each pancake.
  6. Cook until pancakes are golden brown on both sides and serve hot with your favorite syrup.
