Ingredients:
- 4 yellow bell peppers, tops removed and seeds discarded
- 1 cup cooked quinoa
- 1/2 cup black beans (rinsed)
- 1/2 cup corn kernels
- 1/4 cup diced tomatoes
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
Instructions:
- Preheat oven to 375°F.
- Mix quinoa, beans, corn, tomatoes, and seasonings in a bowl.
- Fill each pepper with the mixture and top with cheese if using.
- Place in a baking dish with 1/4 cup water at the bottom.
- Cover with foil and bake for 30 minutes. Remove foil and bake 5 more minutes.
