The skin is firm, glossy, and pale green when young, turning to a bright yellow with age. Green bell peppers are typically crunchy and juicy with a mild, sweet flavor. It’s important to not that green bell peppers as less sweet than the more mature yellow and red bell peppers. They’re a great source of vitamin A, C, calcium, iron, and potassium. When stored properly green bell peppers will keep up to one week when stored unwashed in the crisper drawer of the refrigerator.
