Butternut squash is a medium to large sized vegetable with a light tan, smooth, very thin skin. It has a moist and dense flesh with a hollow center that has stringy pulp with many small, flat, cream-colored seeds. Butternut squash when cooked, becomes tender and has a mildly sweet and nutty squash flavor. It is a great source of soluble fiber, vitamins B6, C, magnesium, and potassium. This squash can be sliced and added to stews, curries, and pasta. The seeds are also edible, commonly seen roasted and salted, similar to pumpkin seeds. Butternut squash can be used in baked goods like cakes and pies. When uncut and stored in a cool, dry place, acorn squash can last for up to 2 months.
