Mangoes are a multi-colored fruit with different mixtures of red, yellow and green. Their skin is inedible, and contains a sap that some people can find irritating. Mangoes are a good source of fiber, Vitamin A, Vitamin C, and potassium. Mangoes can be used in either raw or cooked applications such as fresh salsas and sauces, as well as a wide range of desserts and baked goods. Mangoes that are still firm will continue to ripen if stored at room temperature and once they are fully ripe, they can be stored in the refrigerator for up to 5 days.
