The Milpero tomatillo is a miniature relative of the tomatillo, it’s around half the size and its flavor is more concentrated with less acidity and slightly sweeter taste than the tomatillo. Most Milpero varieties are green and covered in a papery outer husk firm, both of which gain a purple hue when fully ripe. Not only do they have a higher concentration of minerals than tomatoes, they are also are rich in vitamins A, C, K, and dietary fiber. While Milpero Tomatillos are excellent in both cooked or raw applications, they are most commonly used in salsas and sauces. After removing the husk, make sure to wash thoroughly to remove the sappy substance underneath. Milpero Tomatillos with their husk still attached can last for up to a month in the refrigerator. The Tomatillos that have already had their husks removed can last up to two weeks in the refrigerator.
