Beef & Rice Stuffed Green Bell Peppers

Ingredients:

  • 4 large green bell peppers
  • 1 lb ground beef (or plant-based alternative)
  • 1 cup cooked white or brown rice
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/2 small onion, diced
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella or cheddar cheese

Instructions:

  1. Preheat oven to 375°F.
  2. Slice off tops of peppers, remove seeds/membranes.
  3. Brown ground beef with onion in a skillet. Drain excess fat.
  4. Add rice, tomatoes, seasonings. Simmer 5 minutes.
  5. Fill peppers with mixture, top with cheese.
  6. Bake for 30–35 minutes until peppers are tender and cheese is melted.
