
Ingredients:
- 4 medium beets, scrubbed
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 cups mixed salad greens
- ½ cup goat cheese, crumbled
- ¼ cup walnuts, toasted and chopped
- Balsamic glaze for drizzling
Instructions:
- Preheat oven to 400°F (200°C). Place beets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Wrap each beet in foil.
- Roast in the preheated oven until tender, about 1 hour. Unwrap and cool. Peel beets and cut into wedges.
- Arrange salad greens on plates. Top with beet wedges, goat cheese, and walnuts.
- Drizzle with balsamic glaze before serving.
