Ingredients:

  • 4 medium beets, scrubbed
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 cups mixed salad greens
  • ½ cup goat cheese, crumbled
  • ¼ cup walnuts, toasted and chopped
  • Balsamic glaze for drizzling

Instructions:

  1. Preheat oven to 400°F (200°C). Place beets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Wrap each beet in foil.
  2. Roast in the preheated oven until tender, about 1 hour. Unwrap and cool. Peel beets and cut into wedges.
  3. Arrange salad greens on plates. Top with beet wedges, goat cheese, and walnuts.
  4. Drizzle with balsamic glaze before serving.
