Ingredients:

  • 1 red, 1 yellow, and 1 orange bell pepper, sliced
  • 1 tbsp sesame oil or olive oil
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp honey or maple syrup
  • Optional: sesame seeds, chopped green onion, or tofu/chicken

Instructions:

  1. Heat oil in a skillet or wok over medium-high heat.
  2. Add garlic and sauté for 30 seconds.
  3. Add sliced peppers and cook for 5–6 minutes until just tender.
  4. Stir in soy sauce and sweetener; cook for 1 more minute.
  5. Garnish and serve over rice or noodles.
