Ingredients:
- 4 orange bell peppers, halved and seeded
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 cups vegetable broth
- 1/4 cup cream (or coconut milk for vegan option)
- Salt and pepper to taste
- Optional: basil or parsley for garnish
Instructions:
- Preheat oven to 400°F. Roast peppers face down for 20 minutes.
- In a pot, sauté onion and garlic in olive oil until soft.
- Add roasted peppers and broth. Simmer for 10 minutes.
- Blend until smooth. Stir in cream, season to taste.
- Serve hot with fresh herbs.
