Ingredients:

  • 4 orange bell peppers, halved and seeded
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 1/4 cup cream (or coconut milk for vegan option)
  • Salt and pepper to taste
  • Optional: basil or parsley for garnish

Instructions:

  1. Preheat oven to 400°F. Roast peppers face down for 20 minutes.
  2. In a pot, sauté onion and garlic in olive oil until soft.
  3. Add roasted peppers and broth. Simmer for 10 minutes.
  4. Blend until smooth. Stir in cream, season to taste.
  5. Serve hot with fresh herbs.
