Ingredients:
- 1 large eggplant, sliced into 1/2″ rounds
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- Fresh parsley for garnish
Instructions:
- Preheat oven to 400°F.
- Mix olive oil, garlic, oregano, salt, and pepper.
- Brush mixture onto eggplant slices.
- Place on baking sheet and roast for 20–25 minutes, flipping halfway.
- Garnish with fresh parsley and serve.
