Ingredients:

  • 1 large eggplant, sliced into 1/2″ rounds
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • Fresh parsley for garnish

Instructions:

  1. Preheat oven to 400°F.
  2. Mix olive oil, garlic, oregano, salt, and pepper.
  3. Brush mixture onto eggplant slices.
  4. Place on baking sheet and roast for 20–25 minutes, flipping halfway.
  5. Garnish with fresh parsley and serve.
