Ingredients:
- 4 ripe nectarines, halved and pitted
- 1 tsp olive oil
- 1 cup ricotta cheese
- 2 tbsp honey
- 1/2 tsp vanilla extract
- Optional: chopped pistachios or mint
Instructions:
- Preheat grill to medium-high and brush nectarine halves with olive oil.
- Grill cut-side down for 3–4 minutes until lightly charred.
- In a bowl, whip ricotta with vanilla and 1 tbsp honey.
- Plate grilled nectarines with a dollop of ricotta, drizzle remaining honey, and top with nuts or mint if using.
