Ingredients:
- 2 tbsp butter
- 3 medium leeks, sliced (white & light green only)
- 4 cups diced potatoes
- 4 cups vegetable or chicken broth
- 1/2 cup cream or milk (optional)
- Salt and pepper to taste
- Optional: chives or crispy bacon for garnish
Instructions:
- In a pot, sauté leeks in butter until softened.
- Add potatoes and broth. Bring to a boil.
- Simmer 15–20 minutes, until potatoes are soft.
- Blend until smooth (or leave chunky).
- Stir in cream if using. Season and garnish to serve.
