Quinoa-Stuffed Yellow Bell Peppers

Ingredients:

  • 4 yellow bell peppers, tops removed and seeds discarded
  • 1 cup cooked quinoa
  • 1/2 cup black beans (rinsed)
  • 1/2 cup corn kernels
  • 1/4 cup diced tomatoes
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Instructions:

  1. Preheat oven to 375°F.
  2. Mix quinoa, beans, corn, tomatoes, and seasonings in a bowl.
  3. Fill each pepper with the mixture and top with cheese if using.
  4. Place in a baking dish with 1/4 cup water at the bottom.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake 5 more minutes.
