Roasted Red Pepper & Hummus Wraps

Ingredients:

  • 2 large red bell peppers, roasted or raw, sliced
  • 4 whole grain wraps or tortillas
  • 1/2 cup hummus
  • 1 cup baby spinach
  • 1/2 cucumber, thinly sliced
  • 1/4 cup feta cheese (optional)
  • Fresh basil or parsley

Instructions:

  1. (Optional) Roast red peppers at 425°F for 15 minutes until slightly charred.
  2. Spread hummus over each wrap.
  3. Layer with spinach, cucumber, red peppers, and feta.
  4. Sprinkle herbs, roll tightly, and slice in half.
