Ingredients:
- 2 large red bell peppers, roasted or raw, sliced
- 4 whole grain wraps or tortillas
- 1/2 cup hummus
- 1 cup baby spinach
- 1/2 cucumber, thinly sliced
- 1/4 cup feta cheese (optional)
- Fresh basil or parsley
Instructions:
- (Optional) Roast red peppers at 425°F for 15 minutes until slightly charred.
- Spread hummus over each wrap.
- Layer with spinach, cucumber, red peppers, and feta.
- Sprinkle herbs, roll tightly, and slice in half.
